Rosemary-Balsamic Pork Tenderloins

Ingredients:
2 local fresh pork tenderloins, trimmed from Arkadia butcher
1 1/4 teaspoons salt
1 tbsp crushed Coriander seeds
3/4 teaspoon pepper
2 teaspoons olive oil
4 tablespoons butter, cut into 4 pieces
2 shallots, thinly sliced
2 tablespoons water
1 teaspoon light brown sugar
150ml balsamic vinegar (good quality)
2 teaspoons chopped fresh rosemary
1 tablespoon Dijon-style mustard
