For all of you who have attended the cooking demonstration by Michael Diacono at our homewares department at Arkadia on Tuesday, 16 December, Michael has provided us with the full list of ingredients used for his tasty dishes. Find below.

Filo pastry Christmas crackers with a salmon and avocado filling

Filo pastry
Melted butter
Bread crumbs
Butter for frying
Onion, peeled and chopped
Fresh salmon  diced
Avocado, peeled and diced
Dill, chopped
Salt and pepper
Fresh breadcrumbs 
Fresh cream
English mustard

Supreme of Chicken stuffed with Maltese sausage, apple and sage  

Breast of chicken with wing bone 
Maltese sausage, peeled
Apple, peeled and chopped
Sage and parsley, chopped
Breadcrumbs, if wanted 
To serve 
Steamed or fried asparagus
Apple sauce 


250g dates
3 tbs water
1 tbs anisette
1 tbs rose water
grated peel of 1 lemon and 1 tangerine
½ tsp ,mixed spice
Pinch ground cloves 
450g flour
100g butter
1 tbs sugar
2 tbs rose water 

Cook chopped dates with water till soft. Cool slightly and add anisette, then mix in rose water, grated peels and spices.
