Emmenthal and Broad Bean Mini Quiches
Serves 6
150 grams Emmenthal cheese – diced
200 grams of peeled broad beans
1 large onion – finely chopped
1 piece of fresh garlic – finely chopped
Knob of butter and a little oil
Short crust pastry (depends on the size of moulds, calculate the approx quantity)
5 eggs
150 ml fresh cream
Sea salt and black pepper
6 muffin foil cups or small pie moulds – brushed with melted butter and sprinkled with flour
