Breakfast Berry Brioche

Receipe_Photos2When is the last time you had breakfast in bed? Seriously why not prepare this recipe the night before and give a surprise to your loved one the next morning. A fresh and fruity breakfast for those in need of some TLC.

100g raspberries
100g blueberries
100g strawberries, hulled and roughly chopped
¼ tsp ground cinnamon
2 tbsp maple syrup
4 slices brioche
250g Plain Yoghurt


Put the fruit in a bowl and sprinkle over the cinnamon. Roughly crush with the back of a fork and drizzle over 1 tablespoon of the maple syrup. Set aside for 10 minutes to let the juice run from the fruit.

Toast the brioche slices on both sides until golden. Fold the fruit through the yoghurt and spoon on top of the toasted brioche slices.

Drizzle over the remaining maple syrup to serve.
