The Soup season

After all the food and alcohol consumption following the festive celebrations we all look forward to a detox session. To compliment this we have put together a selection of soup recipes to help you out.

Leek and Potato Soup with Coriander and Prawn

Ingredients

4 Large Leeks – trimmed, washed and chopped
4 large potatoes – peeled, chopped and washed
1 tbsp chopped fresh garlic
2 sticks local celery – washed and chopped
2 litres boiling water
3 Chicken Stock cubes
Sea salt and black pepper to taste
Cooking oil
Half a glass of white wine
Handful fresh coriander leaves
Frozen Prawns – peeled, tail on

Method

Heat some oil and cook the leeks and garlic for about 5 minutes. Add the celery and cook for a further 5 minutes. Splash with white wine every now and again. Add the potatoes, boiling water and chicken stock cubes. Stir until cubes dissolve, cover and simmer for about 30 minutes. Bring off the flame, add a pinch of coriander leaves and blitz with a hand held food blender. Season to taste.

Bring some water to the boil, switch off and throw in the prawns. Leave for a few seconds until they defrost. Drain well, pat dry with paper towel and serve them on the soup together with more coriander leaves to garnish.
